
I love celebrating all holidays! It just gives me another excuse to make some yummy confections! For Fresh Baked Friday, I wanted to make a cupcake celebrating Cinco de Mayo. I love anything with caramel, so working with cajeta (Dulce de Leche) was a wonderful experience. Recently, it was suggested by a friend to make a cupcake with cajeta filling. I can totally can see why she said people just eat it by itself by the spoonful! DE-LIC-IOUS! After tasting it for the first time, I was in heaven. I think I like it even better than caramel.
She also suggested giving the cupcake a cinnamon taste. She said in her culture, they usually eat cajeta with a churro that has a cinnamon flavor. This gave me great guidance of how to make my own rendition of a churro cupcake. We fittingly named it “El Churro“. El Churro is a vanilla bean cupcake filled with cajeta, topped with a cinnamon vanilla buttercream, and cajeta drizzle. Definitely one of my favorite flavors now along with red velvet!
