
I have been craving cookies and cream ice cream lately, which has brought me to bake my own version of a cookies and cream cupcake. I had so many ideas that it was hard to pinpoint exactly how I was going to crank this cupcake out. I decided, after thinking about it a while, to make sure the cupcake had an cookie crust at the bottom of the cupcake. I had never tried this before hoping this was not a mistake. Also, I chose, after trying quite a few cookies and cream cupcakes, to not just go with the standard chocolate cake & vanilla frosting doused with cookie crumbles that most others produce. I wanted it to be exactly like the cookies and cream ice cream I love with chunks in the middle. For the cupcake decoration, I wanted some thing that said “gourmet”. So I added a nice white chocolate candy design with cookie sprinkles on top. Totally enjoyed jumping out of the box for this cupcake! The creative juices were flowing.
Making a new cupcake flavor for me for the 1st time always makes me find room for improvement. After tasting the cupcake, I thought it was a little too chunky on the cookies. Just like our frosting, less is more. To add may be a little more contrast, I would keep the white chocolate deco topper free of cookie crumbles as well. However, I really enjoyed the cookie crust on the bottom and loved the candy on top. Can’t wait to add this to the Glaze menu!
